Muffins: Banana Peanut Butter Oat
Simple pre, post or during workout snacks!
Makes 12
Ingredients
1/2 cup almond pulp from making milk (optional, if omitting, add 1/3 cup more oat flour)
1/2 cup rolled oats
pinch sea salt
1/2 tsp cinnamon
1 tsp baking powder
1/2 cup peanut butter
2 eggs
2 bananas, peeled
1/4 cup maple syrup
Any optional add-ins (chocolate chips, nuts, raisins, etc…)
Directions
Preheat oven to 350º and put silicone muffin liners on a baking sheet.
Put dry goods in high powered blender or food processor and pulse until finely chopped and combined. Place in large mixing bowl.
Add wet ingredients to mixer and blend to combine.
Fold wet and dry together, do not overmix.
Portion into muffin liners using portion/cookie scoop
Bake for 18-20 minutes until puffed, golden and a toothpick inserted in the center comes out clean!
