Recipe: Smashed Roasted Potatoes

with lemon & garlic

These Smashed Russet Potato Rounds are crispy on the outside, tender on the inside, and bursting with the fresh flavors of garlic and lemon. They’re perfect as a side dish for any meal and are easy to prepare with just a few ingredients.

Ingredients:

  • 4 medium russet potatoes, sliced into thick rounds (about 1-inch thick) or handful baby potatoes (if small, you can boil and smash whole!)

  • 2 cloves garlic, minced

  • 1 tsp lemon zest

  • 2 tsp lemon juice

  • 3 tablespoons olive oil

  • 1 tablespoon butter (optional, for extra richness)

  • Fresh herbs (such as parsley or thyme)

  • chili flakes

  • Salt and pepper, to taste

Instructions:

1. Boil the Potatoes

  • Preheat the Oven: Preheat your oven to 220°C (425°F).

  • Prepare the Potatoes: Scrub the russet potatoes and slice them into 1-inch thick rounds.

  • Boil: Place the potato rounds in a large pot of salted water. Bring to a boil and cook for 10-15 minutes, or until the rounds are fork-tender but not falling apart.

  • Drain: Drain the potatoes and let them sit for a minute to allow any excess moisture to evaporate.

2. Smash the Potatoes

  • Smash the Potatoes: Place the boiled potato rounds on a large baking sheet. Using the bottom of a glass or a potato masher, gently smash each potato round to flatten it slightly, leaving them thick with rough edges for extra crispiness.

3. Prepare the Garlic-Lemon Oil

  • Make the Dressing: In a small bowl, combine the olive oil, melted butter (if using), minced garlic, lemon zest, and the lemon juice.

  • Season: Add salt, chili flakes and pepper to taste.

4. Roast the Potatoes

  • Drizzle: Generously drizzle the garlic-lemon oil mixture over the smashed potato rounds, ensuring the garlic and lemon zest are evenly distributed.

  • Roast: Place the baking sheet in the preheated oven and roast for 15-20 minutes, or until the potatoes are crispy and golden brown on the edges.

5. Serve

  • Final Touches: Remove the potatoes from the oven and dgarnish with fresh herbs like parsley or thyme.

  • Enjoy: Serve hot as a delicious side dish.

Tips:

  • Customization: Add paprika or chili flakes for a spicy kick, or sprinkle some Parmesan cheese for a cheesy twist.
