Recipe: Menemen

Breakfast | Serves 2
Ingredients:
3-4 Eggs
1 large Tomato, diced
1 Bell Pepper, diced
1 clove garlic, minced
1 tsp Biber Salcasi (spicy Turkish pepper paste), can also use gochujang paste but will be sweeter or add fresh or dried chilies to tomato pepper mix
1/2 tsp dried oregano
sea salt, cracked pepper to taste
1 tsp+ olive oil or butter
Directions:
Prepare vegetables
Heat pan over medium high heat
Add oil or butter and heat
Add tomato, garlic, pepper and saute 10+ minutes until softened and thickened
Add biber salcasi and spices, salt and pepper
Crack eggs into the pan and gently stir continuously. You don’t want the eggs to burn to the pan or get crispy - they should be cooking in the hot tomato pepper mix
Once the eggs are thoroughly cooked (opaque, not translucent), serve on plate or in bowl with toasted bread
