Recipe: Tzatziki - Greek Yogurt Dip

Ingredients:

  • ½ cup grated cucumber

  • 1 cup thick whole milk Greek yogurt

  • 1 tablespoon fresh lemon juice

  • 1 tsp+ white wine vinegar

  • ½ to 1 tablespoon extra-virgin olive oil

  • 1 garlic clove, grated (or use a press)

  • 1/4 - 1/2 tsp sea salt

  • 3-4 Tbsp chopped fresh dill + extra for garnish

Directions:

  1. Grate cucumber and place in strainer or paper towels. Toss with salt and let sit for 5-10 minutes.

  2. In bowl combine yogurt, white wine vinegar, lemon juice, olive oil, garlic, salt and dill

  3. Mix thoroughly with fork or whisk to combine, taste and adjust (especially salt)

  4. Stir in cucumber

  5. Garnish with dill

Notes:

We make 2-3x this at once and serve with every dinner (and sometimes lunch)! Great with bread, fish, beans, meat, you name it - it’s a great way to get in a healthy protein (yogurt) source. Keep in mind that real Greek yogurt (in Greece) is super thick, strained and full-fat!
