Cinnamon Coffee Cake

Tender coffee cake with a cinnamon sugar swirl

Makes 1 - 9x5 loaf

Ingredients

  • 1 cup All Purpose Flour

  • 1/4 cup Almond Flour

  • 1/4 cup Almond Pulp (from making milk, or use an additional 1/4 cup almond flour)

  • 3/4 cup light brown sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp salt

  • 1/3 cup coconut or sunflower oil (or melted butter)

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/3 cup milk of your choice (I used our almond milk)

Cinnamon Swirl:

  • 1/4 cup light brown sugar

  • 1-1/2 tsp cinnamon

  • 1 tsp All Purpose Flour

Directions

  1. Preheat oven to 350º. Crumple up parchment paper and lightly wet it so it’s flexible. Line a loaf pan with it.

  2. Whisk dry goods in bowl.

  3. Blend wet ingredients in bowl or blender.

  4. Stir gently to combine well.

  5. Portion half of the cake batter in the loaf pan (it won’t look like enough batter, that’s ok!)

  6. Top with half the cinnamon sugar. Repeat with batter and cinnamon sugar.

  7. Gently use a butter knife to swirl through the batter without disturbing parchment liner.

  8. Bake for 55+ minutes until puffed, golden and a toothpick inserted in the center comes out clean!
